Vegan double chocolate muffins

Today I bring you this delicious recipe for healthy and vegan doble chocolate muffins, this recipe is very easy and with 100% natural ingredients and no white sugar. These muffins are very light, moist and fluffy. Ideal for chocolate lovers like me! Enjoy it!

Vegan Double chocolate muffins ¡Super easy to prepare at home!

  • 1 cup spelt flour or buckwheat flour
  • 6 tablespoons cocoa powder
  • 1/2 cup of coconut sugar
  • 1 1/2 teaspoons baking powder
  • 2 tablespoons ground flax + 4 tablespoons water
  • 6 tablespoons coconut oil
  • 1 cup of vegetable milk (I used almond milk)
  • 1 teaspoon of vanilla
  • 1/4 cup dark chocolate chips

Elaboration

  • Preheat the oven to 180 degrees.
  • In a bowl mix the flour, cocoa powder, sugar and baking powder well.
  • In another bowl add the flax meal + the water and let it rest for a few minutes.
  • Then Add the vegetable oil, milk and vanilla and mix the flax flour with the water and mix with all the dry ingredients.
  • Then with the help of a tablespoon put the mixture in each muffin mold and Bake for 20 to 25 minutes at the temperature of 180 Degrees.
  • Then let cool for about 10 minutes and you’re ready to enjoy!
