Vegan and healthy apple and cinnamon cake

  • 3 cups spelt flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 230 grams of applesauce
  • 1/2 cup olive oil
  • 2/3 cup coconut sugar
  • 2 tablespoons of flax flour + 4 tablespoons of water
  • 1 Cup of non-dairy milk
  • 3 teaspoons vanilla extract
  • 2 teaspoons cinnamon
  • To decorate:
  • Vegan whipping cream
  • Grenades


  • Preheat the oven to 180 °.
  • then in a bowl add the flax flour with the water and let it stand for a few minutes.
  • On the other hand, mix the apple puree, vegetable milk, oil and vanilla.
  • Then in another bowl mix well all the dry ingredients, the spelt flour, baking soda, baking powder, coconut sugar and cinnamon.
  • Now add the wet ingredients that we previously mixed with the dry ingredients, and mix everything with a spoon.
  • Put the mixture in the mold and bake for about 25 minutes at 180 ° degrees celsius.
  • Let some cool for at least an hour before consuming.
  • Finally, with an electric mixer, beat the vegan whipping cream until it has a stable texture and then add on top of the cake with the pomegranates.
