Peanut butter energy balls

Ingredients

  • 1 Cup oats
  • 1/2 Cup of almonds or almond flour
  • 3 to 4 tablespoons of maple syrup or you could also use 4 pitted dates
  • 1 teaspoon of vanilla
  • 3 to 4 tablespoons of peanut butter
  • Pinch of salt
  • 2 to 3 tablespoons of hot water (optional) in case the dough is too dry
  • 1/2 cup chopped peanuts 

Elaboration

  • First, in a food processor, grind the oats and almonds until they are really thin.
  • Then add the maple syrup or dates, peanut butter, vanilla, and salt.
  • Process again everything until it is like a moldable dough. (If the dough is dry you can add 2 to 3 tablespoons of hot water)
  • Shape the balls with your hands and coat with the chopped peanuts.
  • Take to the refrigerator for about 20 minutes and ready to enjoy with your coffee!
