Healthy and vegan Pumpkin bundt cake

Bundt mold of 19cm

  • 2 cups Spelt flour
  • ½ – ¾ cup coconut sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 3 teaspoon cinnamon powder
  • 1 teaspoon ginger powder
  • ½ teaspoon nutmeg
  • pinch of clove
  • 2 teaspoons vanilla
  • 1/2 cup almond milk
  • ⅓ cup olive oil or coconut oil
  • 1 ½ cups pumpkin puree


  • Preheat the oven to 180 degrees C and lightly grease the bundt mold.
  • In a bowl, combine all the dry ingredients such as the spelt flour, baking powder, baking soda, and spices.
  • Then add all the wet ingredients such as oil, coconut sugar, milk, pumpkin puree and the vanilla. Mix well.
  • Taste the dough, adjusting the flavor or sweetness to your liking.
  • Pour batter into the prepared pan.
  • Place in the oven, on the center rack, and bake for 40 minutes.
  • Then remove from the oven and let cool before serving.
