Healthy and vegan banana muffins

Hiii! 💚 So today I have this new DELICIOUS recipe of healthy and vegan banana muffins Very easy and fast to do at home!
In this recipe I chose to use spelt flour that compared to the classic wheat flour is much more digestible, provides less calories than classic wheat flour and contains a high percentage of proteins of high biological value! This recipe contains gluten but you can replace spelt flour with buckwheat flour and it will be gluten free banana bread.
I remind you that this delicious banana bread is vegan and naturally sweetened! I hope you like it 💚

Healthy and vegan banana muffins!

Ingredients

  • 1 1/2 Cup spelt flour (if you want it to be gluten free you can replace it to quinoa flour or buckwheat flour)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 2 teaspoons of cinnamon (If you are a cinnamon lover as me, I recommend you to add 1 tablespoon of cinnamon 😁)
  • 2 medium ripe bananas
  • 1/4 cup coconut oil
  • 1/3 Cup syrup maple
  • 1 tablespoon flax flour + 3 tablespoons water
  • 1/2 Cup vegetable milk (I used almond milk)
  • 2 teaspoons vanilla extract

Instructions

  • First preheat the oven 180 °
  • Now prepare the flax flour with the water and let stand a few minutes.
  • On the other hand, in a kitchen robot, mix bananas, vegetable milk, coconut oil, maple and vanilla well.
  • Then in a bowl, mix all the dry ingredients, flour, baking soda, baking powder and cinnamon.
  • Now add the wet ingredients that we previously mixed in the kitchen robot to the bowl with the dry ingredients and mix well.
  • Put the mixture in the muffins mold and bake for about 20 minutes!
  • Let cool a few minutes and ready to enjoy!
