Gluten free, healthy and vegan almond flour vainilla cake

  • 1 and 3/4 cups almond flour
  • 2/3 cup cornstarch
  • 1/2 cup coconut sugar or another healthy granulated sugar
  • 1 and 1/2 tablespoons flaxseed meal + 3 tablespoon of water
  • 2 and 1/4 teaspoons baking powder
  • Pinch of salt
  • 1 cup vegetable milk
  • 2 teaspoon vanilla extract
  • Optional: Sugar powder without calories and almond slices on top


  • Preheat the oven to 175 ° .
  • Prepare 8-inch / 20-centimeter round baking pan with a little of oil.
  • In a small bowl, mix the flaxseed flour with the water and let it rest for a few minutes.
  • Then in a bowl, add and mix the almond flour, cornstarch, coconut sugar, flax flour + water, baking powder and a pinch of salt.
  • Now add the non-dairy milk and vanilla together with the dry ingredients, mix well until smooth.
  • Pour the mixture into the prepared baking pan.
  • Bake in the preheated oven for 35 to 40 minutes, until golden brown.
  • Cool completely in pan before unmolding.
  • Then run a knife around the edge of the pan and invert the cake onto a plate.
  • If desired, sprinkle lightly with calorie-free powdered sugar and with slices of almonds.
