Easy and vegan Pad Thai recipe

Hi everyone!! Today I want to share this super easy and vegan recipe of Pad Thai, it is one of the best known Thai dishes based on rice noodles vegetables and a delicious soy sauce. I created this recipe by my own, mixing Asian tastes that I love. Also this Pad Thai recipe is very versatile and you could also add or change the vegetables in the recipe for the ones you like best. This recipe is gluten free, vegan, vegetarian and super healthy. Ideal for the whole family!


Easy and vegan Pad Thai recipe ¡Super healthy!

Ingredients for 2 servings
For the sauce:

  • 3 tablespoons soy sauce or tamari
  • 2 tablespoons sesame oil
  • 1 or 2 tablespoons of chili (I bought it at the supermarket, similar to siracha) and garlic sauce
  • 1 tablespoon of lemon juice

Other ingredients

  • 150 grams of rice noodles
  • 1 pepper
  • 1 cup bean sprouts
  • 1 cup broccoli
  • 1/4 cup coriander leaves
  • 1/4 cup peanuts or roasted chestnuts with salt (optional)
  • Thin slices of hot pepper (optional)


  • In a small pot, heat all the ingredients in the sauce, stirring until it is homogeneous (no need to boil).
  • In another pot, add enough water to the rice noodle, once the water boils add the noodles for about 4.5 minutes then it is time to strain them and add a pinch of sesame oil so they do not stick.
  • Now, in a pan add a little olive oil, let the oil heat and then add the vegetables (without the cilantro) saute the vegetables for a few minutes then you can add the rice noodle and the sauce
  • Mix well all together with the help of two large spoons
  • Finally, to add the cilantro and the roasted peanuts / cashew
  • Now enjoy!
