Creamy Baked sweet potatos (Vegan)

Hi everyone! I would like to share with you this delicious and vegan option for lunch or dinner, suitable for the whole family!
This recipe of creamy baked sweet potatos does not take much time to prepare, and you can also add other vegetables if you like!
The sweet potato is easy to digest, it contains high amount of fiber and antioxidants. Enjoy it!

Creamy baked sweet potatos ¡Easy and healthy!


  • 2 medium sweet potatoes
    For vegan cream:
  • 1 1/2 cup vegetable milk (almonds, rice, etc.)
  • Salt and pepper to taste
  • 2 teaspoons garlic powder
  • 2 teaspoons nutmeg
  • 2 tablespoons cornstarch + 4 tablespoon of water
  • 2 tablespoons olive oil


  • First preheat the oven to a temperature of 250 °
  • Now slice the sweet potatoes into cubes and set aside.
  • Then to prepare the vegan cream, heat the vegetable milk (over low heat) and add the salt, nutmeg and olive oil (stirring constantly).
  • On the other hand, prepare the two tablespoons of cornstarch and add 4 tablespoons of water and stir well until is well integrated.
  • Once the milk is about to boil, slowly add the cornstarch mixture with the water (stirring constantly) and you will see that it gets more consistency of cream.
  • When the consistency is thick and all is well integrated you can put out the fire.
  • Then in a baking tray add the sweet potatoes and the vegan cream.
  • Bake for 20 minutes at 250 °
  • And ready to enjoy!
