Broccoli soup with lentils

Hi everyone! Today I want to share with you this recipe of delicious broccoli soup with lentils very easy and quick to prepare at home! It took me about 20 minutes to do it.
This broccoli soup contains a good source of antioxidants, fiber, vitamin C, also very low in calories. This recipe is ideal for a dinner or light lunch with full of energy, also suitable for vegans, celiacs and the whole family.

Ingredients
For 2 portions

  • 2 cups of broccoli
  • 1 1/2 cup of boiling water
  • 1/4 cup lentils (I used red lentils, but you could use any type of lentils or legumes)
  • Salt and pepper to taste
  • 1 small onion
  • 2 cloves of garlic
  • 3 tablespoons coconut cream
  • Coriander leaves (optional)

Elaboration

  • First chop the onion and garlic and in a pan saute until is transparent.
  • Then in a pot boil the water, once the water is boiling add the broccoli and lentils and let cook for about 20 minutes until the lentil is ready (soft).
  • Once the lentils and broccoli are ready, add the onion and garlic in the same pot, also add the coconut cream, pepper salt.
  • Then blend everything together, the consistency have to be creamy.
  • To serve I recommend adding coriander leaves over the soup and ready to enjoy!
